I made pancakes for breakfast this morning using almond milk. I left out the sugar (purposefully) and the butter (accidentally) and nobody noticed. They seemed a little flatter than normal. Matt said they were good. I did add cinnamon and vanilla.
I made Monster Cookies for Matt, but didn’t have enough peanut butter for a whole batch. I made a half, but they didn’t turn out quite right. The edges were brown and crispy, but the middles were too unbaked. The cookies spread more than they usually do as well. Ehh. He said they were still good :)
I made Black Bean Burgers to use up leftover black beans. I used 4 cups of beans instead of the 3 as the Pioneer Woman called for, so I added an extra egg. These are for dinner Monday night, so we'll see how they turn out.
It was nice to be able to cook them all at the same time on the baking steel. The edges away from the burners don't get as hot, so you have to keep in mind that the heat isn't even and give those a little more time. Or rotate them.
There is some oil residue that has turned sticky on it, so today I'm going to use Bar Keeper's Friend on it and reseason before we make pizza for dinner tonight.
