My starter is growing :)  It seems to peak 12-14 hours after I feed it.
Last night I mixed up some preferment (2 batches) with my starter.  Then I feed my starter.  This morning, the starter looked really good and bubbly, and the preferment only had a few bubbles.  I mixed some more starter into one batch (for bread) and left the other batch (for Cinnamon Date Pocketbreads).
I mixed up the cinn/date dough.  I used the drained water from the date soaker in the dough for extra flavor.  The dough rose at room temp, then in the evening I formed them into muffin tins and put in the fridge for a slow rise over night.
I also baked a sourdough loaf from the other day.  I forgot to slash the top again, and it didn't really rise during the final rise, even though it was out for 6 hours.  It did rise a little in the oven, with a bit of a split.  BUT it was better than the last time, so we're making progress.  The loaf was still dense, but tasted good.
